I used to write until I had enough or until I ran out of time. The thing is that if an essay has the kind of structure which it ought to have, more often than not you will be safe with in the limit of expected words. But for those who want a more meaningful guide, here is one I recently heard

Weigh Your Essay

When they asked how many words should it be

Estimable professor said wittingly

I want you to think of this, don‘t guess

Gauge your essay like a lady’s dress

Have this on your mind when ever you write

You will be in better stead and most probably might

Overcome any uncertainty and do your best

Use this guideline in every test

Remember a lady’s dress and how she should wear

Essays are similar and the words you prepare

Should be like the dress, long enough to cover the essentials

Short enough to allure with its credentials

And if this be your practice when ever you submit

You’ll be assured a good grade and a favorable credit
